Cooking the rice directly in the seasoned tomato broth gives this economical dish flavour in every grain.
Ingredients
- 300 g long-grain rice
- 400 g kidney beans, drained
- 1 onion, diced
- 2 celery stalks, diced
- 1 green bell pepper, diced
- 2 garlic cloves, minced
- 400 g chopped tomatoes
- 550 ml vegetable stock
- 2 tsp Cajun seasoning
- 1 tbsp oil
- 2 spring onions, sliced
Step-by-step method
- Rinse the rice until the water runs mostly clear and drain thoroughly.
- Heat oil in a heavy saucepan and cook onion, celery and bell pepper for 6 minutes until softened.
- Add garlic and Cajun seasoning and stir for 30 seconds until fragrant.
- Stir in rice, kidney beans, chopped tomatoes and stock and bring to a steady simmer.
- Cover tightly, reduce heat to low and cook for 17–18 minutes without stirring.
- Turn off the heat and rest covered for 10 minutes, then fluff the rice gently and check the seasoning.
- Scatter with spring onions and serve hot with extra hot sauce at the table if desired.
