Creole Vegetable Rice
Creole-style rice with peppers, celery, tomatoes, beans and aromatic Cajun seasoning.

This meat-free one-pot rice uses the classic onion, celery and pepper base associated with Louisiana cooking.
Ingredients
- 300 g long-grain rice
- 1 onion, diced
- 2 celery stalks, diced
- 1 green bell pepper, diced
- 3 garlic cloves, minced
- 400 g canned red beans, drained
- 400 g chopped tomatoes
- 600 ml vegetable stock
- 2 tsp Cajun seasoning
- 1 tbsp olive oil
- 2 spring onions, sliced
Step-by-step method
- Rinse the rice under cold water until the water runs mostly clear, then drain well.
- Heat the oil in a wide saucepan and cook onion, celery and bell pepper for 6 minutes until softened.
- Add garlic and Cajun seasoning and cook for 30 seconds, stirring so the spices do not burn.
- Add rice and stir for 1 minute, then add tomatoes, beans and vegetable stock.
- Bring to a boil, cover tightly, reduce to low heat and cook for 16–18 minutes without lifting the lid.
- Turn off the heat and leave covered for 10 minutes, then fluff gently with a fork.
- Taste for seasoning, scatter over spring onions and serve hot.
