This meat-free one-pot rice uses the classic onion, celery and pepper base associated with Louisiana cooking.

Ingredients

  • 300 g long-grain rice
  • 1 onion, diced
  • 2 celery stalks, diced
  • 1 green bell pepper, diced
  • 3 garlic cloves, minced
  • 400 g canned red beans, drained
  • 400 g chopped tomatoes
  • 600 ml vegetable stock
  • 2 tsp Cajun seasoning
  • 1 tbsp olive oil
  • 2 spring onions, sliced

Step-by-step method

  1. Rinse the rice under cold water until the water runs mostly clear, then drain well.
  2. Heat the oil in a wide saucepan and cook onion, celery and bell pepper for 6 minutes until softened.
  3. Add garlic and Cajun seasoning and cook for 30 seconds, stirring so the spices do not burn.
  4. Add rice and stir for 1 minute, then add tomatoes, beans and vegetable stock.
  5. Bring to a boil, cover tightly, reduce to low heat and cook for 16–18 minutes without lifting the lid.
  6. Turn off the heat and leave covered for 10 minutes, then fluff gently with a fork.
  7. Taste for seasoning, scatter over spring onions and serve hot.
