Homemade Lemonade

Dissolving the sugar first prevents gritty lemonade and makes the sweetness easy to adjust.
Ingredients
- 250 ml fresh lemon juice
- 150 g caster sugar
- 200 ml water for syrup
- 800 ml cold water
- 2 cups ice
- 1 lemon, thinly sliced
- mint leaves, optional
Step-by-step method
- Combine the sugar and 200 ml water in a small saucepan over medium heat.
- Stir just until the sugar completely dissolves, then remove from heat; there is no need to boil the syrup for long.
- Cool the syrup for 10 minutes so it does not warm the finished drink.
- Pour the fresh lemon juice into a jug and add about three quarters of the syrup.
- Add 800 ml cold water and stir well, then taste and add more syrup or water to reach your preferred balance.
- Add ice and lemon slices only shortly before serving so the drink stays cold without becoming overly diluted.
- Serve immediately, garnished with mint if desired.
