Brewing the tea stronger than normal is important because ice and milk dilute it when the drink is assembled.

Ingredients

  • 6 tbsp Thai tea mix or strong black tea
  • 900 ml boiling water
  • 70 g caster sugar
  • 120 ml sweetened condensed milk
  • 120 ml evaporated milk
  • 4 cups ice cubes

Step-by-step method

  1. Place the tea mix in a heatproof jug and pour over the boiling water.
  2. Steep for 5–7 minutes, depending on the strength of the tea, then strain through a fine sieve or cloth.
  3. While the tea is still hot, stir in the sugar until fully dissolved.
  4. Cool the tea to room temperature, then refrigerate until cold if you have time.
  5. Fill four tall glasses generously with ice and divide the tea between them.
  6. Stir the condensed milk into each glass, then pour the evaporated milk slowly over the top for a layered appearance.
  7. Serve immediately and stir before drinking so the sweetness is evenly distributed.
