Family Doria Rice Bake

Doria is Japanese comfort food inspired by gratin; using cooked rice makes it practical for leftovers.
Ingredients
- 700 g cooked rice
- 400 g boneless chicken thigh (diced)
- 200 g mushrooms (sliced)
- 1 onion (diced)
- 40 g butter
- 40 g plain flour
- 600 ml milk
- 1 tsp chicken stock powder
- 160 g mozzarella cheese (grated)
- 40 g Parmesan (grated)
- 1 tbsp neutral oil
- 0.75 tsp salt
- 0.5 tsp black pepper
Step-by-step method
- Heat the oven to 200°C conventional or 180°C fan and lightly grease a baking dish.
- Heat the oil in a frying pan and cook the onion, chicken and mushrooms for 7–8 minutes until the chicken is cooked and the mushrooms have released their moisture.
- Melt the butter in a saucepan, stir in the flour and cook for 1 minute.
- Add the milk gradually while whisking, then add the stock powder, salt and pepper. Simmer until the sauce thickens enough to coat a spoon.
- Spread the cooked rice in the baking dish, top with the chicken mixture and pour over the white sauce.
- Scatter with mozzarella and Parmesan and bake for 18–20 minutes until bubbling and golden.
- Rest for 5 minutes before serving so the layers settle slightly.
