A short miso marinade brings savoury sweetness to the salmon, but wiping away excess before broiling prevents scorching.
Ingredients
- 4 salmon fillets (about 160 g each)
- 3 tbsp white miso
- 2 tbsp mirin
- 1 tbsp sake
- 1 tbsp sugar
- 1 tsp soy sauce
- 1 tsp sesame oil
- 2 spring onions (sliced)
- 1 tbsp sesame seeds (optional)
Step-by-step method
- Mix the miso, mirin, sake, sugar, soy sauce and sesame oil until smooth.
- Coat the salmon lightly with the marinade and refrigerate for 30 minutes to 2 hours.
- Heat the oven grill or broiler to high and line a tray with foil.
- Lift the salmon from the marinade and gently wipe off thick excess so the miso does not burn before the fish cooks.
- Broil for 8–10 minutes, depending on thickness, until the surface is caramelised and the salmon flakes easily.
- Rest for 2 minutes. The centre should remain moist rather than dry.
- Finish with spring onions and sesame seeds and serve with rice and greens.
