Ayran is one of Turkey’s simplest and most refreshing drinks. The foam is part of the experience, so vigorous whisking or blending is worth the extra minute.

Ingredients

  • 500 g plain full-fat yogurt (cold)
  • 500 ml ice-cold water (adjust to preferred thickness)
  • 0.75 tsp fine salt (or to taste)
  • ice cubes (optional)
  • 0.25 tsp dried mint (optional)

Step-by-step method

  1. Put the cold yogurt in a large jug or blender and whisk briefly until completely smooth.
  2. Add about half the cold water and the salt and whisk again.
  3. Gradually add the remaining water until the drink reaches a light, pourable consistency.
  4. Whisk vigorously for 1–2 minutes or blend on high for 20 seconds to create a layer of foam.
  5. Taste and adjust the salt. Ayran should taste lightly savoury rather than strongly salty.
  6. Add ice cubes if you want it extra cold, but avoid too much ice because it dilutes the drink quickly.
  7. Pour into chilled glasses, spooning some foam onto each serving.
  8. Sprinkle with dried mint if desired and serve immediately.
