Sparkling Peach Cooler
A non-alcoholic sparkling peach cooler with ripe peach purée, lemon and chilled sparkling water.

Inspired by Italian peach drinks, this family-friendly cooler keeps the fruit bright and refreshing without alcohol.
Ingredients
- 4 ripe peaches (peeled and chopped)
- 60 ml fresh lemon juice
- 50 g caster sugar (or to taste)
- 80 ml water (for syrup)
- 1 litre chilled sparkling water
- 4 cups ice cubes
- 12 fresh mint (leaves, optional)
- peach slices (to garnish)
Step-by-step method
- Put the sugar and still water in a small saucepan and warm over medium heat until the sugar dissolves. Cool completely.
- Blend the chopped peaches with the lemon juice and cooled syrup until very smooth.
- For a refined texture, press the peach purée through a fine sieve. For a more rustic drink, leave it unsieved.
- Chill the purée for at least 20 minutes so the sparkling water stays fizzy when mixed.
- Fill six glasses with ice and divide the peach purée among them.
- Top slowly with chilled sparkling water and stir once or twice from the bottom of each glass.
- Taste and adjust with extra sparkling water for a lighter drink or a little lemon juice for more sharpness.
- Garnish with peach slices and mint and serve immediately.
