Inspired by Italian peach drinks, this family-friendly cooler keeps the fruit bright and refreshing without alcohol.

Ingredients

  • 4 ripe peaches (peeled and chopped)
  • 60 ml fresh lemon juice
  • 50 g caster sugar (or to taste)
  • 80 ml water (for syrup)
  • 1 litre chilled sparkling water
  • 4 cups ice cubes
  • 12 fresh mint (leaves, optional)
  • peach slices (to garnish)

Step-by-step method

  1. Put the sugar and still water in a small saucepan and warm over medium heat until the sugar dissolves. Cool completely.
  2. Blend the chopped peaches with the lemon juice and cooled syrup until very smooth.
  3. For a refined texture, press the peach purée through a fine sieve. For a more rustic drink, leave it unsieved.
  4. Chill the purée for at least 20 minutes so the sparkling water stays fizzy when mixed.
  5. Fill six glasses with ice and divide the peach purée among them.
  6. Top slowly with chilled sparkling water and stir once or twice from the bottom of each glass.
  7. Taste and adjust with extra sparkling water for a lighter drink or a little lemon juice for more sharpness.
  8. Garnish with peach slices and mint and serve immediately.
